The Richest Spanish Beef with Pumpkin Stew Recipe

I like experimenting with new flavors when I'm looking for something beyond a traditional beef stew.

Most of my creations turn out decent, but every now and then, I come up with something quite special—like this Spanish beef and pumpkin stew recipe.

Pumpkins are often used in Spain's cuisine. Since they're are common in both Spain and the United States, I wanted to create a dish that connects the two cultures.

I thought the beef and pimiento stew was quite good, but I wanted to try something different tastewise.

Stews are also a staple on the old continent, so I knew it was time for something rich and hearty. I thought of a slightly sweet (but sugar-free), savory dish with a hint of tartness.

And if you like a bit of heat, just toss in a red chili pepper (Spanish pepper) like I did with this spicy beef stew recipe!

No wine, no beer, and no artificial ingredients—just natural, wholesome flavors.

Let's Make a Terrific Beef with Pumpkin Stew!

Ingredients for 4 servings


Preparation: 20-25 minutes
Cooking: Approx. 1h30 for the meat on low fire, 20-25 minutes for bacon, green beans, and baby onions. 15 minutes for the potatoes.

  • 1 kg/2.2 lb beef, chopped
  • 150g/5.5 oz thick, unsalted bacon, short slices
  • 350g/12.5 oz pumpkin, diced
  • 100g/3.5 oz green beans, cut in half
  • 80cl/27 fl oz beef broth
  • 1 medium onion, diced
  • 150g/5.5 lb baby onions (pearl onions)
  • 4 garlic cloves, minced
  • 2 scant tbsp paprika
  • 1 small hand of parsley, chopped
  • 2 tsp oregano
  • 1 sprig of rosemary
  • 2 sprigs of thyme
  • 2 tbsp olive oil
  • salt and pepper
  • ½ tsp lemon juice
  • 2.5 scant tbsp flour


Instructions

  1. Heat olive oil in a large pot over high heat. Quickly brown the beef chunks, then season with salt and pepper.
  2. Add the pumpkin and onions, stirring for a couple of minutes.
  3. Sprinkle in the flour and stir thoroughly.
  4. Pour in the beef broth and a teaspoon of lemon juice, stirring a few times.
  5. Add the garlic, rosemary, thyme, oregano, and paprika. Stir, taste, and adjust seasoning if needed.
  6. Cover the pot and let the stew simmer on low heat for at least 1 hour and 30 minutes. Stir every 30 minutes.

Meanwhile:

  1. Green Beans: Blanch in water for 5 minutes, then drain and rinse with cold water.
  2. Baby Onions: Blanch for 15 minutes in water, season, and add a small piece of butter.
  3. Bacon: Blanch the slices in salted water for 2-3 minutes, then drain. Brown in a pan with olive oil until crispy. Sieve and set aside.
  4. Final Sauté: Fry the green beans and baby onions in olive oil on medium heat until the onions turn golden brown. Drain and mix with the bacon. Set aside.

Final Steps:

  1. 10 minutes before stew is done, add the bacon, green beans, baby onions, parsley, and extra pumpkin pieces to the stew. Stir well and taste, adjusting salt and pepper if needed.
  2. Sometimes they add boiled potatoes for a heartier dish. Boil 2-3 medium potatoes (cut into golf-ball-sized chunks) for 15 minutes or until tender. Add 2-3 pieces to each stew serving.


TIPS: 

  • If you want a spicy kick, add a red chili pepper!
  • Blanching removes impurities from meat, creating a clearer broth. It also helps cook vegetables and fruits while deactivating enzymes. The technique helps maintain texture and flavor.
  • Once the stew is ready, you can add a few boiled potato pieces if you like. This dish is primarily protein-based.
  • Let the stew simmer for at least 1 hour and 30 minutes.
  • If the stew is too watery, take the cover off and let the broth reduce.
